Tonight's dinner was yummy but only gets two noms as I think there can be improvements.
I started last night with some parsley, some smoked garlic, some pine nuts and some salt. Then smashed it all up in the mortar. Then added a little oil and let it all infuse.
Then tonight I put it in a pocket cut into a free range chicken breast then roast.
Serve with taters and a salad.
It was very very nice but I think it could have possibly done with butter in the filling rather than the oil and could possibly wrap it up in bacon or prosciutto.
Still very good for an ordinary night of the week.
