Take a small onion and some garlic and chop finely.

Sauté them in olive oil and add coriander, ginger, cumin, Cayenne pepper and chilli and fry a little longer.

Then add a quarter of a cup of rice per person of rice. Fry for a short time and add some chopped smoked mackerel.

Add some white wine and then a good dollop of crème freche and stir. Do not let it boil but simmer until the rice is cooked.

Serve with a salad and chomp away.

Its a kind of take on Kedgeree but as I don't like eggs I didn't add those but if you like those I imagine they would work well too.

It was surprisingly yummy.
