Take a piece of topside steak and beat it out thinly. Marinate for a short time in Oyster Sauce, Soy Sauce, sugar, salt and pepper.

Meanwhile bash some garlic, chilli flakes, salt and pepper in a mortar. Gently fry the mixture off in a little oil and add some stir fry vegetables and some thin rice noodles. After a little while then add some soy and a few chilli flakes and put on a lid to finish cooking the noodles. Turn out of the wok into a bowl.

Heat some more oil in the wok and when it is hot add the beef with its sticky marinade and stir fry for a couple of minutes before adding the noodles and veg back into the wok. Add a few bean shoots and some pak choy and then serve.

What can I say.... NOM NOM NOM!
