More Snow

Well I am feeling very virtuous today as I made it to work. I made it past the veritable bevy if stuck trucks, avoided the lunatic drivers speeding down the snowy lanes of the motorway and the tailgating white vans and did a days work.

At which point I came home, did the shopping and came home and tidied up. I cooked something rather yummy tonight, chicken lasagne.

Take chicken breast, bacon, onion and garlic and dice finely. Cook off the onions and garlic then add the bacon and chicken. Once cooked add red wine, tomato pasatta, chicken stock, Worcester sauce, herbs and simmer. Then make a bechemel sauce. Layer out in the usual fashion and cook.

I served it with a salad of greens, tomatoes, artichoke hearts and picked walnuts. All went very nicely I think and I have plenty left over for freezing.

Yummmm. Definite three noms rating.

Thanks. I get grief from a few friends about my recipes as they never include quantities... :-)

By happy coincidence we had all the above named ingredients. The bacon we used was Applewood smoked (on special offer at Tesco) which gave it a lovely BBQ flavour. Agreed 3 Noms.
